Spicy Sweet Potato & Black Bean Tacos

If you imagine veggie tacos as bland and boring, you have to give these a try. 

Sweet potatoes roasted with chili powder, cumin, smoked paprika, and cayenne pepper create a perfect combination of sweet and spicy flavor! Add in some black beans with hot sauce and roasted garlic PLUS all. the. toppings. and what you have is anything but bland! 

They are also satisfying and filling, packing 7 grams of fiber and 7 grams of protein per taco!

Spicy Sweet Potato & Black Bean Tacos

Makes: 8-10 tacos

Prep Time: 15 minutes

Cook Time: 25-30 minutes

Total Time: 45 minutes

Notes:

*Simple Guacamole: 2-3 ripe avocados, 1 TBSP lime juice, 1/2 tsp sea salt, 1-2 TBSP minced red onion, 1 garlic clove, minced, 1 TBSP fresh cilantro, chopped. Add avocado, lime juice, and salt to a small bowl. Mash together with a fork. Stir in remaining ingredients! 

**Cashew sour cream: 1 cup raw cashews, soaked in water for 2 hours or overnight, drained and rinsed, 1-2 tsp lemon/lime juice, 1 tsp apple cider vinegar, 1/2 tsp sea salt, 1/2 cup water. Add ingredients to a small food processor or blender. Blend on high until smooth and creamy.
