This no-oil salad is another reason to love avocado!
As if I could be any more obsessed with this deliciously creamy fruit! I live and breath for avocado toast and can devour guacamole any night of the week. Aside from their versatility and flavor, avocados are also an amazing source of whole food fats.
This recipe features avocado literally rubbed into kale - this releases the natural oils and softens + improved the flavor of the kale. Since discovering this secret, I haven't wanted to make kale salad any other way! You can even create your own adventure by choosing your favorite veggies and nuts for toppings :)

No-oil Kale Avocado Salad

Notes:
Vegan Parmesan: 1 cup raw walnuts, 1-2 TBSP nutritional yeast, 1 garlic clove, minced, 1/2 tsp sea salt. Blend in a small food processor until combined. Enjoy on salads, pasta, pizza, and more!
