Golden Pistachio Coconut Energy Balls

Snack recipes may be my favorite to create. 

Don't get me wrong, I love a good breakfast or dinner, but there's something about having homemade, healthy snacks around throughout the week that makes me REALLY excited! 

These golden pistachio coconut energy balls are SO. GOOD. When I did the first trial run of the recipe, I definitely ate about half the batch in 1 day :)

These babies are naturally sweetened with dates, packed with good fats + protein from nuts and seeds, and spiced up with that golden favorite...TURMERIC!

Don't be scared to add this lovely anti-inflammatory spice into the mix. The flavor is very mild when combined with cinnamon! I think you'll love it.

*Energy balls will keep in the fridge for 1-2 weeks (if you can keep them around that long!). Freeze for longer storage!
