Kale Salad + Almond Ginger Dressing

Friends, I have been SO excited to share my FAVORITE salad dressing recipe with you! 

This kale salad with almond ginger dressing comes together in just 15 minutes! The ingredients are simple and easy to keep as pantry staples. I make this at least once a week for dinner plus leftovers for lunch the next day! 

Almonds provide a hearty and filling base for this dressing, garlic and ginger add mild spice, and apple cider vinegar finishes off the flavor with just the right amount of tang! 

This is a crowd pleaser - I've tested it on veg eaters and omnivores alike!

Kale Salad + Almond Ginger Dressing

Serves: 4-6

Notes: 

*This is a thick dressing so massaging those leaves is KEY. Plus, it softens the kale leaves and improves the taste and texture! 

**Vegan parmesan is easy to throw together and keep in your fridge for up to 2 weeks! My favorite recipe is: 1 cup raw walnuts (could also use almonds or cashews!), 2 TBSP nutritional yeast, 1 garlic clove, Β½ tsp sea salt. Blend in a small blender until coarsely ground. Use to top any pasta or salads!
