Loaded Berry Lemon Muffins

Well hello, new favorite muffins. 

Baking trial runs can be tricky - not as much room to play and it's definitely more of a science! For this reason I literally jump for joy when I get it right on the first try (it doesn't happen often) :) But it did with these!

I'm loving the combination of berry and lemon - one of my favorite smoothie recipes also brings these two together. 

These muffins will keep you feeling full without weighing you down. They are refined-sugar free and soy free. Also low in calories, yet nutritionally dense!

Loaded Berry Lemon Muffins 

Makes: 15-17 muffins 

Prep Time: 10-15 minutes

Cook Time: 20-25 minutes

Total Time: 30-40 minutes 

Notes:

*If you don't have spelt flour on hand, you can find it at most health food stores or sections. You can also sub an additional 1/2 cup whole wheat pastry flour for this recipe. 

**If you only have 1 muffin tin, you can re-use your first tin after it cools, no problem!
